Pizza Peel Guide

If you want to bake really good pizza, you need a good pizza peel. The moment when the pizza goes into the oven may look simple, but this is often where things go wrong. With the right peel and a little technique, it becomes smoother, more enjoyable, and much less frustrating. In this guide, we'll go over the most important things you need to know about pizza peels, why they are so important, which material is best, and how to use and care for them.

Why a good pizza peel is so important

A pizza peel is not something you should skimp on. There are a few pretty obvious reasons for that.

First of all, nothing is more annoying than when the pizza won't slide off the peel. A bad peel can stick, feel clumsy, be too heavy, or simply work against you instead of with you.

Second, it actually affects how the pizza turns out. If you mess up when launching it, the pizza may end up crooked, lose its shape, or bake unevenly. And that's a shame when you've spent time on the dough and toppings.

Wood or aluminium – which is actually best?

The short answer is that both work well, but in slightly different ways. Wooden peels often offer better glide when sliding the pizza into the oven, especially once they have been broken in. Wood absorbs a little moisture, which makes the dough less likely to stick, and many people therefore find wood more forgiving—especially for home bakers. Aluminum peels, on the other hand, are thinner, lighter, and more durable. They do not warp from moisture and can withstand heavy use without any problems, making them popular at high temperatures and when baking large quantities. Aluminum is also more convenient if you want to be able to turn the pizza with the same peel.

So which should you choose? If you mostly bake at home and want something easy to work with, wood is often a safe choice. If you bake often, use high heat, or want maximum precision, aluminum is hard to beat.

In fact, many people use both: wood for sliding the pizza into the oven and aluminum for turning and removing it.

Caring for your pizza peel

Taking care of your pizza peel is easier than you might think, but it makes a big difference to how long it lasts. After use, it is usually enough to brush or wipe off any flour and residue. Wooden peels should not be soaked; instead, wipe them with a slightly damp cloth as needed, and oil them from time to time to prevent them from drying out. Aluminum peels are more durable and usually only need to be wiped down, but they can be cleaned with warm water and a little dish soap if necessary. Regardless of the material, it is important to always dry the peel thoroughly before putting it away and to store it in a dry place—this will help it retain both its functionality and feel for a long time.
